Ingredients
  • ½ cup plain yogurt
  • 3 tbsp. lemon juice
  • 2 tbsp. tandoori seasoning
  • ¾ tsp. salt
  • ½ tsp. black pepper
  • ¼ to ½ tsp. cayenne pepper
  • 2 1/2 lbs. chicken (bone-in and skin-on)

Ingredient Notes
Chicken
  • Drumsticks and thighs work well together, but you can use either or both separately. Typically, breasts are too large and don't cook evenly.
Yogurt
  • Since regular yogurt makes a thinner marinade that coats the chicken more easily, I usually use it instead of Unani. You can use Unani, but you will have to add a little more marinade to thin it out.
Tandoori Masala
  • For convenience, I often use pre-mixed tandoori masala.
Lemon Juice
  • This tandoori chicken marinade is infused with lemon juice. The acid helps tenderize the chicken as well as help all the ingredients blend well.
Salt and Pepper
  • Adjust the pepper powder and salt in the recipe to your liking.

Instructions
  1. Take a large bowl and add yogurt, lemon juice, cayenne pepper, salt, pepper, and tandoori masala and stir until well combined.
  2. Add the chicken pieces to the tandoori marinade and toss well to coat each piece of chicken.
  3. Refrigerate the marinated chicken for two hours or overnight.
  4. Lightly oil a rack or racks and preheat the air fryer to thirty to seventy-five degrees F.
  5. Spot the chicken on the rack, skin side down. If air fryer is small, you may need to work in batches.
  6. After twelve minutes, flip the chicken pieces over and continue air frying for another ten to twelve minutes or until the skin is crispy and lightly browned and the internal temperature reaches one point sixty-five degrees F.
  7. Add more salt and pepper to taste and serve the tandoori chicken.

In the tandoor
  1. Preheat the oven to four hundred degrees F.
  2. Place a baking rack on a metal-rimmed baking sheet.
  3. After twelve minutes, flip the chicken, skin side down, and continue cooking for another twelve to fifteen minutes.
  4. If you want a nice crispy skin, put them in the broiler for a minute at the very end.

Tips
  • Before coating the chicken, we can combine the marinade in a glass dish. This way we don't waste a plastic bag. Please make sure the chicken is well coated and give it a little shake. Refrigerate for at least two hours.
  • Depending on the size and design of your air fryer, you may need to work in batches. If air fryer has two racks, be careful to move them around a few times during baking. Those closest to the heat source will usually brown more quickly.
  • Always start the chicken pieces skin side down, then halfway through, flip them over. This helps the chicken skin crisp on top and brown beautifully on both sides.

Refrigerator
Place the leftover tandoori chicken in a sealed container and store the chicken for three to four days.
Freezer
Cover the tandoori chicken in plastic wrap, then in aluminum foil, then place it in a sealed bag or container and store the chicken for two to three months.
