- One pound ground chicken
- One teaspoon salt
- Half teaspoon garlic powder
- 0.5 teaspoon onion powder
- 1/2 teaspoon Italian seasoning

- 3/4 cup pork rinds
- 1/2 cup Parmesan cheese
- 1 large egg
- 2 tablespoons olive oil, mixed
Alfredo sauce:
- 1/2 cup butter
- 1/2 cup heavy whipping cream
- 2 teaspoons minced garlic
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt

Ingredient Notes:
- Ground Chicken I use ground chicken with a little bit of chicken to get juicy meatballs but you can also use lean chicken.But it can lead to dry meatballs.
Pork:
- I use pork as a substitute for breadcrumbs to bind the meatballs. We can also use almond flour breadcrumbs to bind the meatballs.
Parmesan Cheese:
- I add freshly shredded parmesan cheese because it is better for adding to Alfredo sauce and meatballs because it melts well. You can also use pre-grated parmesan cheese.But it contains an anti-caking agent which will prevent the cheese from melting properly.
Heavy Whipping Cream:
- I use heavy whipping cream to make a smooth and delicious sauce. We can also use low-fat whipping cream but it may not be as creamy as full-fat whipping cream.
Butter:
- We use butter to prepare this Alfredo sauce
Eggs:
- We use eggs in meatballs and they also act as a binding agent to make these meatballs.
Olive oil:
- I add a small amount of olive oil to the meatballs and also to brown them.
Directions
To make the meatballs:
- Take a large bowl and add the pork, mason cheese, olive oil, minced chicken, and spices.
- Mix them well with a spatula until they are completely incorporated.
- Apply a little oil to your hands and form the balls with your hands for about 12 minutes.
- We can grab a large frying pan and heat it on medium to high heat.
- Brown the meatballs in the frying pan on all sides and remove the meatballs to a plate.
To make the Alfredo sauce:
- Reduce the heat of the bread and add the cream and butter.
- Cook them on low heat for two minutes.
- Then add the Italian seasoning, chili powder, garlic and salt and whisk to combine.
- Cover the cooked meatballs with a lid and simmer on low heat for ten minutes to allow the flavors to meld.
- When the time is up, add the mason cheese to the sauce and meatballs and mix.
